🌞 Greetings and Salutations, August Adventurers! 🌞

As the sun-kissed days of summer begin to wane and the gentle breeze carries whispers of autumn's approach, we find ourselves reflecting on the fleeting beauty of the season. It's a time of cherished moments, shared laughter, and the creation of lasting memories with those who mean the most to us.

Amidst the whirlwind of warm embraces and joyous gatherings, we, at Crowded Table, have been diligently crafting experiences that are set to ignite your senses and tantalize your taste buds. As the days have unfolded, we've revelled in the company of wonderful souls, embarked on culinary journeys, and initiated exciting new ventures that we are thrilled to share with you.

We've got a plethora of pop-up surprises lined up for the coming months, each promising an extraordinary and immersive dining experience that will leave an indelible mark on your heart. We are bringing to you our September Pop-Up right here!

Recipe Spotlight: Peach Galette: A Slice of Summer's Bliss

We bring you a delightful medley of ripe peaches encased in a golden, flaky crust, capturing the essence of summer in every bite. Create this rustic yet elegant dessert that's perfect for sharing and savouring the sweetness of sun-kissed peaches. Get ready to elevate your summer gatherings with a slice of pure, fruity joy.

Ingredients:

· 4 fresh peaches, washed and thinly sliced

· 1 package (454g) phyllo pastry, thawed

· 2 tbsp. butter, melted

· 2 tbsp. honey

· 1 tsp vanilla extract

· whipped cream (for serving)

· ground cinnamon (for sprinkling)

Instructions:

1. Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure it's ready when your tarts are assembled.

2. Prepare the Phyllo Pastry:

· Carefully unwrap the thawed phyllo pastry and keep it covered with a slightly damp kitchen towel to prevent it from drying out.

· Gently cut the phyllo pastry into 12 equal squares using a sharp knife or kitchen scissors.

3. Toss Peaches in Honey and Vanilla:

· In a medium-sized bowl, mix together the honey and vanilla extract.

· Add the thinly sliced peaches to the bowl and gently toss them in the honey and vanilla mixture to coat them evenly. Set aside.

4. Assemble the Tarts:

· Line a baking sheet with parchment paper to prevent the tarts from sticking.

· Take one phyllo square and lightly brush melted butter on top. Place another phyllo square slightly offset from the first one, creating a staggered effect. Repeat this process with two more sets of phyllo squares, creating a stack of 6 staggered phyllo squares in total.

5. Layer the Peaches:

· Place a portion of the honey and vanilla-coated peach slices in the center of each stack of staggered phyllo squares.

· Gently fold the corners of the phyllo squares in slightly, creating a loosely gathered effect around the peaches.

6. Bake the Tarts:

· Place the assembled tarts in the preheated oven and bake for 10-13 minutes, or until the edges of the phyllo are golden brown and crispy.

7. Final Touches:

· Once the tarts are baked, remove them from the oven and allow them to cool slightly on the baking sheet.

· Transfer the tarts to individual serving plates.

8. Add Toppings:

· While the tarts are still warm, top each tart with a generous dollop of whipped cream, placing it beside the peach slices.

9. Finishing Touch:

· Sprinkle a pinch of ground cinnamon over the whipped cream on each tart. The warmth of the tarts will help release the aroma of the cinnamon.

10. Serve and Enjoy:

· These peach phyllo tarts are best served warm. Enjoy their delightful combination of crispy phyllo, honey-vanilla infused peaches, creamy whipped cream, and a touch of cinnamon.

Note:

· Be mindful when working with phyllo pastry, as it can dry out quickly. Keep it covered with a damp towel and work efficiently.

· Feel free to adjust the sweetness by varying the amount of honey used or by adding a sprinkle of powdered sugar before serving.

We have picked from the selections of one of our cherished wineries on the tour, we present the chosen wines that embody our passion. Amongst these exceptional offerings, my personal sparkling favourite, the effervescent "Bubbles," shines brightly. Hailing from none other than the Lakeside Cellars in Osoyoos, this winery has graced us with a truly splendid collection. Event Update: Fired-Up Food Fest

The Leiman Projects crew and family invited us to test one of our menus at their summer company celebration. We set out on a culinary adventure and created our "Fired Up Food Fest" Menu. This menu is a delightful blend of flavours that will soon be available in our shop. The positive feedback we received during the tasting event has fueled our anticipation for its upcoming release.

Our pursuit of perfection even led us to the sun-dappled vineyards of the Okanagan, where we sourced wines that tell stories of terroir and passion. We can't wait to pour these liquid gems into your glasses and watch as you savour every sip.
